Our next holiday recipe is a spin on a traditional potato dish, latkes. We added some spice to this dish using our Ancho Chile Pepper Spread, which compliments the savory shallots and smooth butter. This spread can be found in our Dip and Spread Set and in our Napa Taster. Pair this dish with our CA Merlot. The ancho chile flavors pair well with the cherry fruit in the Merlot. The structure of this wine layers with the potato and rich butter textures producing a savory and satisfying pairing. Yum!
2 c. Russet Potatoes, Peeled and Shredded
1 1/2 tbl. Shallot, Grated
3 Eggs + 1 Yolk (Optional), Beaten
2 tbl. All-Purpose Flour
1 1/2 tsp. Kosher Salt
1/2 c. Clarified Butter
1 Jar Ancho Chile Pepper Spread
Using cheesecloth, wring absolutely all of the water out of the potatoes. In a medium/large bowl,combine the potato, shallot, eggs, flour and salt. In a large skillet, preferably cast iron, over medium heat and coated with a thin layer of butter, drop in a 2-tablespoon-sized dollop of the latke mixture. Press down on the latke with the back of the spoon to form a circle that is about a 1/3 of an inch thick. Sear for about 1.5 to 2 minutes then flip and do the same for other side. When fully cooked remove to a paper towel and let rest for a minute before serving with the delicious Ancho Chile Pepper Spread.
